Vernaccia Secca D.O.C.G.



An elegant sparkling wine, with fresh and spicy aromas, balanced with a good persistence.
Perfect as an aperitif, tasted with seasoned cheeses, with cold cuts, as the ciauscolo typical from Marche region.
Excellent throughout the entire meal with first courses rich in seasoning and flavor or with lamb or pork, rabbit in porchetta, cod, fries.

Grapes:  100% Vernaccia Nera

Dried grapes:  50%

Total acidity:  5,80%

Dry extract:  24,00 ‰

Residual sugars:  18-22 g/l


The selection and harvesting of the grapes take place by hand for an optimal drying session in special wooden boxes for 2-3 months.
In the cellar starts the soft pressing of 50% of dried vernaccia nera and the remaining fresh pressed. The first two fermentations take place separately and at different times, this phase has a longer duration than the sweet Vernaccia in order to have a minimum sugar residue of about 18g/l. The third fermentation takes place in an autoclave by combining the two parts of wine. During the second fermentation, the carbon dioxide obtained naturally is not dispersed, this ensures that the wine keeps all the natural aromas and flavors and the characteristic aftertaste of the vernaccia nera.
