Winemaking
The selection and harvesting of the grapes takes place by hand for an optimal drying session in special wooden boxes for 2-3 months. In the cellar there is a soft pressing of 50% of the dried vernaccia nera and the remaining fresh pressed. The first two fermentations take place separately and at different times, the third fermentation takes place in an autoclave by joining the two parts of wine. During the second fermentation, the carbon dioxide obtained naturally is not dispersed, this ensures that wine keeps all the natural aromas and flavors and the characteristic aftertaste of the black vernaccia.
